Sometimes you get lucky. I was killing time on the Internet, idly wondering what I was going to make for dinner. The one certainty was that I had to use up a bunch of Russian kale in the 'fridge. And what should show up in NetNewsWire but a wonderful recipe for a spinach and rice torta, courtesy of The Accidental Hedonist. Since kale, spinach, and chard are basically interchangeable, I was all set. Even better, this is a rice dish, and there's nothing [livejournal.com profile] ocelotn likes better than rice.

Scanning the recipe, I noticed that it called for an onion. That's fine, but I also wanted to use up some leeks I had lying around. So I substituted. There's always a hunk of Parmesan in the 'fridge here at the House of Doors and Windows. I happened to have arborio rice around, but if I didn't, regular rice would do. And the rest is just cooking.

If you wanted to do this faster, and didn't have any kale, you could certainly use some of that bagged baby spinach they sell in supermarkets everywhere. About a minute in the microwave, right in the bag, and it's wilted. Even frozen spinach would probably work, though you'll need to wring it out or something. Cook the rice for 10 minutes, while you get the rest of the ingredients together, and you can have the thing in the oven in under 20 minutes. And it's even pretty good for you -- and made from stuff you can keep around.
